Steak

  1. Grate about a quarter of the onion into a medium bowl.
  2. Set aside the remaining onion for the gravy.
  3. Add the Worcestershire sauce, ketchup, brown sugar and egg.
  4. Season generously with salt and pepper and whisk.
  5. Combine with ground meat and panko.
  6. Gently stir the mixture to combine without overmixing.
  7. Form into 8 small, oval-shaped patties about 1 inch thick on a plate
  8. Place in freezer for 5 to 10 minutes.
  9. Heat a large skillet over medium heat.
  10. Add olive oil to hot pan.
  11. Remove the patties from the freezer.
  12. Add them to the hot oil and cook until browned, 2 to 3 minutes per side.
  13. Transfer to a plate.

Gravy

  1. Finely dice the remaining onion.
  2. Slice the mushrooms.
  3. To the same skillet, add the onion and mushrooms.
  4. Season with salt and raise the heat to medium-high.
  5. Stir occasionally until mushrooms and onion are deeply browned (about 8-10 minutes).
  6. Sprinkle flour over the vegetables and stir until four is no longer visible. (about 30 seconds)
  7. Stir in the beef stock and milk.
  8. Season with salt and pepper and bring to a simmer.
  9. Add the seared steaks to the gravy and reduce the heat to continue simmering
  10. Cook until gravy reaches desired consistency, 4 to 5 minutes.
  11. Plate and sprinkle with chives (optional).
